Brewing Products
Limited grew out of a site originally established in 1795 as a Scotch
distillery, giving rise to the brand name of Brewing Products' line of
malts and malt extracts: Scotmalt. The Kirkliston site (located near Edinburgh)
was acquired by Distillers Company Limited (DCL) in 1912, who in 1924
built the malt extract factory that would become Brewing Products' headquarters
six decades later. DCL's improvements to the property included a Saladin
box maltings facility that increased its capacity to 25,000 metric tonnes
(28,000 U.S. tons).
Brewing Products is now owned by a private partnership
in conjunction with Alexander Inglis and Sons, an Edinburgh-based grain
merchanting business founded in 1890. The relationship entitles Brewing
Products to a reliable supply of grains from its established cousin,
grains that can be traced from the field to the final product.
The company's blending of pale, crystal, and black
malt extracts with high-quality aroma hop extracts and water drawn from
the Craigmaicllen well produce a range of malts and malt extracts for
all types of beer, from American golden Pilsner to Irish stout. Scotmalt
malts are available in convenient 25-kg bags; malt extracts are available
in 7.5-, 15-, 25-, 300-, and 1,000-kg containers.

Unless specified, Brewing Products' malts and malt extracts are
made from two-row spring barley grown at quality-assured farms in the
countryside of eastern Scotland. Processing is conducted at the malt
extract factory in Kirkliston.
Scotmalt 1: A well modified, extra-low-protein
ale malt made from Golden Promise barley. Odor of mash: sweet. Degree
of clarity: bright. Rate of filtration: normal.
Scotmalt 2: A medium-modified, low-protein
ale malt made from Chariot barley. Odor of mash: sweet. Degree of clarity:
bright. Rate of filtration: normal.
Scotmalt 3: A well-modified, medium-protein
ale malt made from organic barley grown on accredited farms. Odor of
mash: sweet. Degree of clarity: bright. Rate of filtration: normal.
Scotmalt 4: A well-modified wheat malt (Riband
variety) for use as an adjunct in ale malt grists. This malt is particularly
useful to enhance head formation and "cling." Odor of mash: sweet. Degree
of clarity: bright. Rate of filtration: normal.
Scotmalt 5: Intended for use as an adjunct
in ale malt grist.
Scotmalt 6: A well-modified green malt gently
roasted until it resembles a light caramalt. Contributes a very light
caramel flavor when used as an adjunct to lagers or very light ales.
Scotmalt 7: A well-modified green malt gently
roasted until it resembles a dark caramalt. When used as an adjunct,
this malt contributes slightly more flavor than light caramalt and assists
in the reduction of oxidation in ales.
Scotmalt 8: A well-modified green malt gently
roasted until it resembles a light crystal. Mainly used as an adjunct
in bitter-type beers for added color and taste.
Scotmalt 9: A well-modified green malt gently
roasted until is resembles a dark crystal. Used as an adjunct in ale
malt grists, it contributes a very distinctive flavor which must be
measured carefully in darker beers.
Scotmalt 10: A well-roasted barley with high
levels of pyrazines, making it particularly bitter and astringent. This
product requires great care in use but is well suited to the addition
of aroma hops such as Target. Best suited for stouts and porters.
Scotmalt 11: A well-roasted dry malt, similar
to a chocolate malt. Used mainly in sweet-flavored stouts and porters
that call for a slight astringent aftertaste.
Scotmalt 12: A well-roasted dry malt resembling
black malt. This malt is commonly used in very dark beers with intense
flavors, such as porters and heavy Irish-type stouts.

Brewing Products' malt extracts start with Saladin boxes, sometimes
moving to roasting drums, then travel into mash tuns, and are finally
concentrated using batch evaporators. They are packaged per customer
request.
Scotmalt 13: A range of hopped malt extracts
suitable for the production of a variety of lagers, ales, stouts, porters,
and bitters. Flavored with Target hop aroma and colored with quality-assured
Scottish crystal or black malt.
Scotmalt B1200: An unhopped malt syrup derived
from roasted barley. Suitable for the production of stouts and porters.
Scotmalt CR130: An unhopped dark brown nondiastatic
crystal malt extract derived from ale malt and crystal malt. Suitable
for the production of dark beers with a crystal character.
Scotmalt S10: An unhopped, light brown, nondiastatic
viscous malt extract with a characteristically malty taste and aroma.
Lightly kilned malt is processed using a mash tun and a multi-effect
evaporator. Suitable for the production of light beers and Pilseners.
